This is my favorite roast and for many, many reasons. First it's the most forgiving roast and as long as you abide by it's rules -give it enough time and a bit of something acid to break down the juicy meat - no matter how you cook it it's going to be flavorful and tender. I also love this roast for cutting up my own stew meat and it also makes a great substitute for short ribs when trying to fill cannelloni in a pinch.
