Beef short ribs are larger and usually more tender and meatier than their pork counterpart, pork spare ribs. Short ribs are cut from the rib and plate primals and a small corner of the square-cut chuck. We love this cut, slow-cooked with bbq sauce or cooked with plenty of red wine as in our Red Wine Braised Short Ribs. I also love to cook some extras, make a beautiful Bolognese sauce for pasta, or stuff the falling-off-the-bone meat into cannelloni for a quick, elegant meal. Each package is approximately 2 pounds. $6.50 lb
