The chuck is my favorite roast for many, many reasons. First, it's the most forgiving roast and as long as you abide by its rules -give it enough time and a bit of something acid to break down the juicy meat - no matter how you cook it, it's going to be flavorful and tender. I also love this roast for cutting up my own stew meat, and it also makes an excellent substitute for short ribs when trying to fill cannelloni in a pinch.
