We know that if you are looking for liver, you're either a huge liver fan, as I am, or your family, friend, or doctor has told you that you need to consume more liver. Either way, you ALWAYS want to be sure to eat the healthiest liver you can find. Liver is more likely than other meat products to contain high levels of pesticides (from animal feed), antibiotics, and other drugs. This is never a concern when you purchase liver from River Cottage Farm. We never use antibiotics, drug pesticides, or herbicides on our farm or on our animals. Ounce for ounce, liver is probably more nutritious than any other food. A 3.5-ounce serving of cooked beef or chicken liver supplies more than your daily requirement of vitamin B12 and large amounts of other B vitamins. It is also rich in protein, zinc, copper, iron, and even vitamin C. There are a few ways to get more liver in your diet if you're not used to this wonderfully tender organ meat. One way is to place it into a food processor with ground beef and make meatballs of hamburger patties, and no one will be the wiser! I love liver that's been breaded and fried in healthy oil (only animals fats and coconut oils should be used for frying), and even if you're part of the gluten-free crowd, you can bread with Bob's Red Mill 1:1 gluten-free flour.
