Chicken - Tostadas Salsa Verde

This is a perfect recipe to use up leftover shredded chicken. You can also bake 2 or 3 chicken breasts for about 20 minutes while you prepare the rest of the ingredients.

  • 4 flour or corn tortillas
  • 3 ounces pepper jack cheese about 3/4 cup
  • 2.5 cups shredded chicken
  • 1 cup salsa Verde plus more for serving - optional
  • 1/4 cup cilantro chopped +2 tablespoons for garnish
  • .25 Teaspoon ground cumin
  • 1 Cup iceberg lettuce shredded
  • 3 Plum tomatoes diced
  • .25 Cup sour cream


  • Preheat the oven to 400°F. Arrange the tortillas on a rimmed baking sheet. Sprinkle cheese evenly over the tortillas; bake until golden brown, 8 to 10 minutes
  • meanwhile, in a medium bowl, toss together the chicken, salsa, the 1/4 cup cilantro, and the cumin. Spoon the mixture evenly over the tortillas; bake until heated through, about eight minutes
  • top with lettuce, tomato, and sour cream. Sprinkle with the remaining cilantro. Serve immediately, with additional green salsa if desired
