Scottish Highland cattle originated in the highlands of Scotland – big surprise! Archaeological evidence dates the Scottish Highland breed back to the sixth century and the first recorded writings still existence date to the twelfth century. Highlands were first imported to the US in the late 1800’s. This breed is very slow to mature which makes it a less likely choice for beef producers who look for quick weight gains but it seems that the slower the maturity rate, the more marbling and certainly the more flavorful the finished beef will be.
