Our ground pork is the perfect foundation for many of my favorite recipes. At the top of that list though is my Rockfield-Famous meatloaf. In it I combine beef and pork to make the perfect meatloaf mix. My next favorite thing to do with my ground pork is to make up my own sausage. Although our Italian and Breakfast Hillbelly sausage can't be improved upon I sometime need a sausage with more sage flavor or more a brat flavoring. So rather than stock 15 different type of sausage I turn to Penzey's spices and once the ground pork is thawed I mix 1 TBS of their sausage spice mix to one pound of ground and let it sit overnight in the fridge.
