I make our yogurt from milk brought in right at milking time. Our yogurt is thick and mild teeming with healthy bacteria (streptococcus salivarius subsp. thermophilus, Lactobacillus delbrueckii subsp. bulgaricus, Lactobacillus acidophilus, Bifidobacterium longum, Lactobacillus Delbrueckii Subsp. Lactis). We never use thickening agents or gelatin in our yogurt. We package our yogurt in 1-quart glass jars.
