The delicious sausage is most often associated with Louisiana Cajun cuisine, where it is a coarse-grained smoked sausage made using pork, garlic, pepper, onions, and seasonings. The pork used is mostly from a smoked Boston shoulder roast.
Of course this sausage is the basis for the best darn Red Beans and Rice this side of Louisiana. I love this dish so much that I admit I don’t have many other recipes for it.
