Beef short ribs are larger and usually more tender and meatier than their pork counterpart, pork spare ribs. Short ribs are cut from the rib and plate primals and a small corner of the square-cut chuck. We love this cut slow cooked with bbq sauce or cooked with plenty of red wine as in our Red Wine Braised Short Ribs. I also love to cook some extras and make a beautiful Bolognaise sauce for pasta or stuff the falling off the bone meat into cannelloni for a quick, elegant meal. 6.50lb.
