A cut of beef that is incredibly tender and flavorful. Although four of these medallions will beg for a stick of butter and half a bottle of red wine all they really need is a good sear and gentle broiling until medium rare to medium. Each medallion is approximately .5 lb and they come 2 medallions to a package. $28.00lb If chateaubriand is on the menu for a special occasion just let us know and we will have it specially cut from the thickest part of the tenderloin.
