This is my family’s all-time favorite sausage! This finely ground sausage is slightly more polished, but don’t let that fool you. Chris and his gang of magicians hand stuff natural casings with a blend of pasture-raised Pekin duck, pork, organic dried pears, and port wine for sausage that is slightly sweet and tightly bound, perfect for the pan.

Duck Sausage
We like to throw these under the broiler in a cast iron pan while our eggs are cooking. They take about 15 minutes on medium broil to be perfectly browned.
As with all smoking goose products, the sausages are gluten-free, casein-free, nitrate-free, and MSG-free.
